Cancer Research UK has launched an new BBQ fundraising campaign, encouraging the country to fire up their barbies on 19-20 July to say ‘burger off’ to cancer. By donating to attend, family and friends will contribute to the charity’s fight cure cancer, while having fun and eating good food.

Simon Rimmer BBQ recipe: Pulled Lamb Vindaloo
- Serves 4
Ingredients
2kg of lamb shoulder, most of outer fat removed1 tbsp chilli flakes
1 tbsp vindaloo curry paste
200ml red wine vinegar
250ml chicken stock
3 finely sliced onions
6 finely sliced garlic cloves
1 tbsp finely chopped rosemary
Mix the chilli flakes, curry paste and rub into the lamb along with some salt and pepper
Pour the stock and red wine vinegar over, then scatted on the onions, garlic and rosemary
Cover with parchment, then foil
BBQ for 3.5 hours at 1700c
Uncover, and roast for 1 hour more
Once done, shred with forks and serve with rice and raita
