Galvin at Windows Team up with Borough Market’s Turnips for Earth Day

Combining fine-dining finesse with seasonally driven dishes showcasing nature’s bounty, here’s vegan tasting menu that is as elegant as it is earthy…

Galvin at Windows and Borough Market’s greengrocer and restaurant Turnips have come together to create a showstopping, fine-dining vegan tasting menu that demonstrates just how superb plant-based dishes can be.

Launching on World Earth Day, Galvin at Windows Head Chef Marc Hardiman (ex- The Ritz Hotel) and Turnips Chef Patron Tomas Lidakevicius (ex-Jason Atherton’s City Social) will plate up a carefully considered six-course menu that features spring’s finest ingredients exclusively sourced from the Turnips stall and local producers.

Served at the London Hilton on Park Lane’s sky high restaurant while following the earthy Turnips ingredient-led ethos, the duo will create three dishes each, each centred around a seasonal vegetable with sustainable eating in mind.

Highlights include a refined twist on British classics, with dishes such as Wye valley asparagus, morel mushrooms and nettles; celeriac ribbons, mint and capers; and  coconut crème, macerated berries and lemon verbena for dessert.

To go with the dishes, Head Sommelier Rudina Arapi has selected a range of delicate vegan and organic wine pairings from renowned wine-growing regions, including a vibrant Vouvray from Touraine, and a natural red Morgon from Beaujolais.

Galvin at Windows Head Chef, Marc Hardiman, said: “We are so excited to be collaborating with Turnips this Spring. Operating for more than 30 years as a greengrocer, the team at Turnips shares our passion for the best of British produce, with this latest evolution of our menu showcasing how hard we’re working to evolve our plant-based offering for guests.”

The menu is available from April 22 – Earth Day – until May 29, during lunch and dinner service Wednesday to Saturday. The six-course-tasting menu is £99 per person including wine pairing or at £65 per person without wine pairing.
