The esteemed Ekstedt at the Yard at the Great Scotland Yard hotel is putting on a special six-course tasting menu in celebration of the Swedish tradition of Midsummer.
Created the by Michelin-starred chef patron Niklas Ekstedt, the menu takes its ques from classic dishes that are popular in Niklas' homeland this time of year- think fresh flavours of the woods and forest prepared in the chef's signature, fire-cooked, style.
The menu starts with snacky bits before moving on to smör, ost och sill; a classic Swedish appetiser of butter, cheese and herring.
This is followed by beef tartare, horseradish and pickles, which is backed up by juniper-smoked trout with Jersey royal potatoes and sea lettuce, showcasing the kitchen's smoking and pickling techniques.
Keeping in line with the Scandinavian country's love of sweet treats, diners are treated to two desserts to round the meal off.
The first is the forage-flavoured woodruff mousse and sorrel sorbet, which is followed by wood fire oven-baked meringue with summer berries - a nod to Niklas signature fire-led ‘old Nordic’ approach to cooking.
The menu is available for £100 per person, with wine pairing (£80) or a non-alcoholic pairing (£45) additional.
The Midsummer tasting menu is available until July 31 and runs alongside the regular tasting menu.
