Chefs behind the Galvin restaurants, the Holborn Dining Room, The Game Bird and Rosa's Thai Cafe, come together for a five-course supper club charity dinner hosted by Cinnamon Kitchen come September.
On Tuesday, September 20, Jeff Galvin, Calum Franklin, Lisa Goodwin-Allen and Saiphin Moore will join forces with Cinnamon Collection Executive Chef Vivek Singh to create a night of sublime feasting to raise funds for Hospitality Action.
The charity helps hospitality workers get back on their feet after suffering a setback, and obviously, the charity's work was vital for the industry during the pandemic.
Dishes for the night are based on the theme of 'spice', and the courses see each chef put their spin on the theme.
Rosa's Thai Kitchen founder Saiphin and Vivek serve up courgette fritters and lamb roomali along side a Hattingley Valley sparkling reception.
Following this, Saiphin start the meal off with chicken larb salad (the spicy dish with crunchy rice).
Author of the award-winning The Pie Room Cookbook and Holborn Dining Room executive chef Calum Franklin brings to the table wild duck en croute, served alongside Vivek's hot sweet pumpkin chutney.
The Michelin-starred Galvin brothers next plate up a cured salmon served with Baeri caviar in a ponzu dressing, with Vivek’s signature dish of clove-smoked lamb saddle coming next as the main, which comes with a beetroot keema in a saffron sauce and biryani rice.
To round everything off, Michelin-starred Lisa Goodwin-Allen has created a lightly spiced Valrhona chocolate with hazelnut and lime.
Choose a wine pairing to go with your meal, and TV chef Brian Turner will host an auction in which masterclasses, bespoke dining experiences and vineyard tours are all up for grabs.
